I know, I know, three posts in one day, it’s lunacy around here.
I just wanted to get you thinking about pork belly. I have had two, yes two, dreams about pork belly in the last week. One involved a complicated preparation where I braised the pork in eau de vie made from pears (is there such a thing?) and then roasted it “until crisp and browned” (that’s what I was saying in the dream) and glazed it with and apple cider syrup. Sounds pretty good, but what do you serve that with? Any suggestions?
When I get around to trying it out I will let you know how it is. Hooray for food dreams.
Some roasted pears along side might be nice; or sweet potatoes mashed with cooked pears and topped with toasted pecans. Something green, like a brussel sprout slaw or even some of the creamy greens with bacon alongside could be good. Can I come over?? xoxo
Ooh, yes. Roasted pears. And brussel sprouts – maybe shaved, and cooked quickly in some butter with toasted hazelnuts. And yes, come over!

You’re back…..YAY! I’ve been one of those checking in. I love your three short posts. Your one about cooking for Robert gave my heart a squeeze. Building a house together is one of the most stressful things you could do as a couple. So it bodes well that coming down the homestretch you can write something like that.
And I love your dream dinner….yum.
There is such a thing as pear eau de vie, maybe expensive to use as a braising liquid but hey!…maybe this is a preview of your “finished the house” celebration dinner!
Kathy, I love the mash of sweet spuds and pears with the pecans idea. How about a bitter green on the side? I had a pork chop with sauteed apples the other night with a side of sauteed rapini, garlic and pancetta. It was a good balance.
